This Feta Omelette is a fantastic healthy breakfast recipe. Quick and easy to cook, simple and delicious. It has become a very firm favourite - we usually like to take our time over it for Sunday morning breakfast while deciding what to do with the day.
Although we prefer the simple, subtle flavours of this recipe as written, sometimes I will add mushrooms or even replace the feta with mushrooms and thyme. Of course all the usual omelette fillings can be substituted as you choose.
